"We love blending single varietals, especially for a wine like Merlot, which can vary so much based where they're grown and the age of the vines," explains Will. "In the newer plantings, you get bright, red, juicy fruit characteristics. With the mature vines, you get earthy, spicy, and tobacco flavors with more elegant tannins." By combining them all, this results in an extremely well-balanced wine that pairs perfectly with all sorts of cuisine.
